Grilled BBQ Tempeh Bacon Lettuce Wraps

Ingredients
2 cups coleslaw mix
1/3 cup plant-based mayonnaise
2 packages (6 ounces each) smoky bacon tempeh
8 large bibb lettuce leaves
1/4 cup barbeque sauce
2 green onions, thinly sliced
2 radishes, quartered and thinly sliced crosswise
1/2 cup frozen corn, thawed
1/4 cup drained pickled jalapenos, chopped
Directions

1. Prepare outdoor grill for direct grilling over medium heat. In medium bowl, toss coleslaw mix, mayonnaise, and 1/4 teaspoon each kosher salt and black pepper. Makes about 2 cups

 

2. Spray both sides of tempeh with cooking spray; place on hot grill rack, cover and cook 5 minutes or until grill marks appear, turning once

 

3. Divide tempeh into lettuce leaves and drizzle with barbeque sauce; top with coleslaw mixture, onions, radishes, corn and jalapeños. Makes 8 lettuce wraps
